1 Corn, kernels cut off the cob
2 TB Chopped Shallots
1 Lime
0-1 Serrano
Pepper
Half Bunch Chopped Cilantro
1 Peach, Peeled and Diced
Heat 1 TB olive oil in a pan medium high. Cook the corn
without stirring 2-3 minutes. Add shallot and as much serrano pepper as you’d
like. Cook, stirring, 1-2 minutes. Transfer to a bowl. Add the cilantro, and
juice from half the lime. Drizzle with olive oil, add salt and pepper and mix
together. Enjoy!
